Scallops In Saffron Sauce Recipe

Ingredients
  • 1/4 tsp saffron threads .
  • 1 tsp white wine vinegar .
  • 1/2 lb fresh string beans, cut in 1 inch length .
  • 12 tbsps unsalted butter, softened .
  • parsley, for garnish .
  • sea salt .
  • 1/4 lb fresh green peas, shelled .
  • 3/4 c dry white wine .
  • 2 shallots, sliced fine .
  • 3/4 c heavy cream .
  • white pepper .
  • 2 medium turnips, peeled & cut into sticks .
  • 3 tbsps unsalted butter .
  • Saffron Sauce .
  • 1 small head red leaf lettuce .
  • 12 sea scallops, prepared for cooking (removing muscle) .
  • salt & freshly ground black pepper .
  • 3 large carrots, peeled & cut into sticks

Directions
  • Step #1 Bring a large pot of water to a boil with sea salt, & add string beans, cooking until crisp, approximately 10 mins.
  • Step #2 Remove beans with a slotted spoon, put in a strainer run under cold water.
  • Step #3 Add peas to the boiling water & cook in the same way you cooked the beans.
  • Step #4 Now heat 3 Tablespoons of butter in a frying pan over med-heat/flame & cook carrot sticks for 5-7 mins.
  • Step #5 Add the turnip sticks & cook this until both are crisp & tender, approximately 5-8 more mins.
  • Step #6 Spice up with salt & pepper to taste.
  • Step #7 Remove the pan from the heat.
  • Step #8 Stir your beans & peas into the carrot/turnip mixture, then cover & set aside.
  • Step #9 Preheat your oven to 475 degrees F.
  • Step #10 Now you want to prepare the sauce.
  • Step #11 First heat a bit of water in a saucepan, turn on low heat & set aside to use as a warmer for your sauce.
  • Step #12 Then mix shallots, white wine & vinegar in another small saucepan.
  • Step #13 Cook over med-heat/flame until all liquid has evaporated.
  • Step #14 Whisk in the cream, lower the heat & let simmer to reduce the cream by half.
  • Step #15 Remove the pan from the heat & whisk in your 12 tbsps of softened unsalted butter a little at a time.
  • Step #16 Spice up with salt & pepper & then stir in the the saffron.
  • Step #17 Place your saucepan over the hot water you set aside in another pan, to keep your sauce warm.
  • Step #18 Next you want to season the sliced scallops with salt & pepper.
  • Step #19 Arrange the scallops on top of the mixed vegetables & bake this until the scallops are just opaque, approximately 4 mins.
  • Step #20 To serve, arrange a crown of lettuce on a serving platter.
  • Step #21 Then make a mound of vegetables in the center of the platter & arrange the scallops on top.
  • Step #22 Spoon the sauce over & garnish with fresh parsley.
