Ingredients
2 c all-purpose white flour .
1 1/2 tsps vanilla extract or amaretto liqueur .
1/2 c milk .
1/2 c of softened butter or margarine .
2 eggs .
1 tsp baking powder .
1/8 tsp salt .
icing sugar, to garnish cake .
1/2 c fruit cocktail, juice from the can .
1/4 c white sugar .
1 (28 oz) can fruit cocktail in heavy syrup, drained (collect the juice to add to milk)
Directions
Step #1 Preheat oven to 350°F.
Step #2 In a large mixing bowl cream together the softened margarine & the sugar,.
Step #3 mix well till creamy smooth.
Step #4 Add one egg at a time & beat after each addition.
Step #5 In a measuring glass mix the milk, the fruit cocktail juice & the vanilla extract.
Step #6 (or amaretto liqueur).
Step #7 In a seperate mixing bowl sift the flour,baking powder & salt together.
Step #8 Add 1/4 of the flour mix to the creamy butter mixture alternately with a little of the liquid ,mix well after each addition.
Step #9 Keep doing this till there.
Step #10 is no more flour or liquid left.
Step #11 Your cake batter should be rich & smooth,.
Step #12 if needed add a tablesppon or more milk or juice,not too much you don't want your cake watery.
Step #13 Fold in the drained fruit cocktail to your batter & mix well till all fruit is coated & not floating on top of batter.
Step #14 Pour the batter into two well greased & lightly floured loaf pans or a bundt cake pan.
Step #15 If using non-stick pans then just spray with a little oil spray.
Step #16 Bake for 40 to 50 mins for loaf pans or till lightly golden brown.
Step #17 & insert toothpick comes out clean.
Step #18 If baking in bundt pan ,.
Step #19 it should be about the same time.
Step #20 Remove cake from oven & let sit on cake rack.
Step #21 Remove cake from pans & place.
Step #22 on serving dish.
Step #23 Put icing sugar in sieve.
Step #24 & tap side of sieve to get a light dusting all over top of cake.
Step #25 Serve cake slices with whipped cream or ice cream, makes a yummy light dessert.
Step #26 Note: you can do a summer berry cake by adding fresh fruit like blueberries,pears,strawberries,sliced peaches,raspberries,.
Step #27 & or nectarines.
Step #28 When making the fresh berry cake use either 1/2 c of fruit cocktail juice + 1/c milk OR use 1 c of milk,.
Step #29 but if your replacing the juice with the whole c of milk you will need to add 1/3 c more sugar.
