Jambalaya Ham And Oyster Dressing Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 1 medium green bell pepper, sliced .
  • 1-1 1/2 c turkey broth or chicken broth, as needed .
  • 2 (8 oz) containers oysters, drained & cut into 2-3 pieces (may use 24 fresh shucked oysters) .
  • 2 1/2 c converted white rice .
  • 8 tbsps unsalted butter .
  • 2 medium celery ribs, sliced (with leaves) .
  • 1 tbsp cajun seasoning .
  • 1/2 lb smoked ham, cut into 1/2 inch dice .
  • 1 tbsp worcestershire sauce .
  • 4 scallions, sliced .
  • 1 large onion, sliced .
  • 1 tsp salt .
  • 1/4-1/2 tsp fresh ground pepper .
  • 1 (15 oz) can tomato sauce

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil over high heat.
  • Step #2 Add in the rice; lower heat to medium.
  • Step #3 Boil for about 15-20 mins or until rice is barely tender.
  • Step #4 Drain rice in a sieve & rinse under cold running water.
  • Step #5 Transfer rice to a large bowl.
  • Step #6 In a big skillet, let butter melt over medium-high heat.
  • Step #7 Add in the ham, celery, bell pepper, scallions, & garlic; stir/saute for about 10-12 mins or until the onion is golden.
  • Step #8 Add in the Cajun seasoning; stir fo 30 seconds.
  • Step #9 Add in tomato sauce, 1 c broth, salt, Worcestershire sauce, & pepper.
  • Step #10 Bring to a simmer; lower heat to medium & cook 10 mins, stirring every once in awhile, or until slightly thickened.
  • Step #11 Add the sauce to the bowl rice along with the oysters; stir this to mix.
  • Step #12 Transfer mixture to a lightly butter casserole dish.
  • Step #13 Drizzle with 1/2 c broth; cover & bake in a 350° oven for about 30 mins.
