Vietnamese Stir-fried Beef Salad Recipe

Ingredients
  • Dressing .
  • 1 tbsp soy sauce .
  • Salad .
  • pepper .
  • 3 tbsps Chinese white rice vinegar .
  • 1 tbsp garlic, finely sliced .
  • Marinade .
  • 6 tbsps spring onions, finely sliced .
  • 3 tbsps peanut oil .
  • salt .
  • 3 tbsps peanut oil .
  • 1 lb lean filet of beef, sliced against the grain 1/4-inch thick & 2-inches long .
  • 1 tsp sugar .
  • 8 oz soft salad leaves (2 c) .
  • 5 tbsps garlic, coarsely sliced .
  • pepper .
  • 1 tbsp fish sauce (nuoc mam or nam pla) .
  • 2 tsps sesame oil

Directions
  • Step #1 In a large salad bowl, mix the vinegar, garlic, salt, & pepper.
  • Step #2 Gradually beat in the sesame oil & peanut oil.
  • Step #3 Stir in the onions; then, set aside.
  • Step #4 In a bowl, mix all marinade ingredients well & let meat marinate in mixture for 20 mins.
  • Step #5 Heat wok over high heat until very hot, then add peanut oil.
  • Step #6 When it's hot, stir-fry the garlic until it turns golden brown (20 seconds).
  • Step #7 Remove with a slotted spoon & drain on paper towels.
  • Step #8 Reheat the oil, & when it's very hot & smoking slightly, add the beef & cook this until it's just barely cooked through (2 mins).
  • Step #9 Remove & let drain through a sieve.
  • Step #10 Add the leaves to the dressing in the bowl & toss thoroughly to coat.
  • Step #11 Garnish with garlic & top this with beef.
  • Step #12 Serve as soon as possible.
