Swiss Almond Apple Cake Recipe

Ingredients
  • 4 apples, peeled, thinly sliced .
  • 2/3 c sugar .
  • Cake .
  • 2 tbsps flour .
  • 2 eggs, beaten .
  • 1 tsp grated lemon peel .
  • 2 tbsps lemon juice .
  • 1/2 c sugar .
  • 1/4 c powdered sugar .
  • 1/2 c sour cream .
  • Glaze .
  • 2 c flour .
  • 2 eggs .
  • 1/4 tsp salt .
  • 1/2 c butter, softened .
  • 1/4 c raspberry preserves .
  • 1-2 tsp lemon juice .
  • 2 tsps baking powder .
  • Topping .
  • 1 c ground almonds

Directions
  • Step #1 Heat oven to 350°.
  • Step #2 Grease & flour 9 or 10 inch springform pan.
  • Step #3 In large bowl, mix 2/3 Celsius sugar & butter; beat until light & fluffy.
  • Step #4 Add 2 eggs & 2 T.
  • Step #5 lemon juice; beat until well mixed.
  • Step #6 In small bowl, mix 2 Celsius flour, baking powder & salt; mix well.
  • Step #7 Add to egg mixture; beat at lowish speed until well mixed.
  • Step #8 Spread in greased & floured pan.
  • Step #9 Spoon preserves over batter; carefully spread to cover.
  • Step #10 Top with apple slices; slightly press into batter.
  • Step #11 In medium bowl, mix all topping ingredients; mix well.
  • Step #12 Pour over apples.
  • Step #13 Bake at 350° for 55-65 mins or until apples are tender, edges are light golden brown & toothpick comes out clean.
  • Step #14 Cool 10 mins.
  • Step #15 Carefully remove sides of pan.
  • Step #16 In small bowl, mix all glaze ingredients until smooth; drizzle over cake.
  • Step #17 Serve warm or cool.
