Szechuan Braised Meatballs
Ingredients
Marinade .
1 1/2 tsps sugar .
1/2 c orange juice .
1 tbsp shaoxing rice wine or dry sherry .
3 garlic cloves, minced .
1 lb lean beef steaks, sliced against the grain 1/4-inch thick & 2-inches long (easier if steaks are partially frozen) .
2 tsps sesame oil .
1/2 tsp salt .
2 dried red chili peppers, cut in half lengthwise .
1/4 tsp sesame oil .
1 tbsp dried orange peel, soaked & coarsely sliced .
Sauce .
1/4 tsp szechuan peppercorns, roasted & finely ground .
2 tbsps dark soy sauce .
2 fluid oz peanut oil .
2 tsps cornstarch .
1 tbsp dark soy sauce .
1 1/2 tbsps gingerroot, finely sliced
Directions
Step #1 In a bowl, mix all marinade ingredients well & let meat marinate in mixture for 20 mins.
Step #2 Combine sauce ingredients; set aside.
Step #3 Heat wok over high heat, then add peanut oil (be careful of splattering).
Step #4 Remove beef from marinade & stir-fry until browned (3 mins).
Step #5 Remove & let drain through a sieve.
Step #6 Pour most of the oil out of the wok, reserving about 2 tsps.
Step #7 Reheat the oil, & when it's very hot & smoking slightly, add the dried chili peppers & stir-fry for about 10 seconds.
Step #8 Return the beef to the pan & add sauce.
Step #9 Stir-fry for 3 mins, mixing well.
Step #10 Serve as soon as possible.
