Braised Oxtail (potjiekos) Recipe

Ingredients
  • pepper .
  • olive oil .
  • salt .
  • 2 kg oxtails .
  • 8 small sweet potatoes, peeled & cubed .
  • 25 white pearl onions or shallots .
  • 4 fresh thyme sprigs .
  • 750 ml white wine (cabarnet or similar)

Directions
  • Step #1 Fry the oxtail in a hot casserole dish in olive oil to seal it.
  • Step #2 Add wine & thyme.
  • Step #3 Cook in 150 C/300 F oven for 2 hrs.
  • Step #4 Add sweet potatoes & onions, & cook another 30 mins.
  • Step #5 Spice up & serve hot.
