Ingredients
pepper .
olive oil .
salt .
2 kg oxtails .
8 small sweet potatoes, peeled & cubed .
25 white pearl onions or shallots .
4 fresh thyme sprigs .
750 ml white wine (cabarnet or similar)
Directions
Step #1 Fry the oxtail in a hot casserole dish in olive oil to seal it.
Step #2 Add wine & thyme.
Step #3 Cook in 150 C/300 F oven for 2 hrs.
Step #4 Add sweet potatoes & onions, & cook another 30 mins.
Step #5 Spice up & serve hot.
