Spiced Chicken With Black-eyed Peas And Rice Recipe

Ingredients
  • 1 tsp minced garlic .
  • 4 (6 oz) boneless skinless chicken breast halves .
  • 1 tsp Tabasco sauce (or hot sauce of choice) .
  • 1 tsp Old Bay Spice uping .
  • 1 tsp paprika .
  • 1 (15 7/8 oz) can black-eyed peas, undrained .
  • 1 tbsp olive oil, divided .
  • 1 c sliced onions .
  • 1 1/2 c cooked long-grain rice .
  • 1/4 c sliced green onions .
  • 1/2 tsp sugar .
  • 1/2 tsp salt, divided

Directions
  • Step #1 Heat 2 tsps oil in a big nonstick skillet over medium-high heat.
  • Step #2 In a small bowl, sugar, Old Bay, mix together the paprika, & 1/4 tsp salt; sprinkle mixture over chicken.
  • Step #3 Put chicken in the skillet; cook 2 mins on each side.
  • Step #4 Wrap handle of pan with foil wrap.
  • Step #5 Place pan in oven; bake in a 350° oven for 6 mins or until chicken is done; cover & keep warm.
  • Step #6 Heat 1 tsp oil In a large-ish saucepan over med-heat/flame.
  • Step #7 Add 1 c onion & garlic; stir/saute for 3 mins.
  • Step #8 Stir in 1/4 tsp salt, Tabasco, rice, & black-eyed peas; cook 3 mins or until well heated, stirring often.
  • Step #9 Spoon about 3/4 c rice mixture into each of 4 bowls; top each with 1 chicken breast half.
  • Step #10 Sprinkle top each serving with 1 tbsp green onions.
