Ingredients
6 large egg yolks .
1 c whole almonds, toasted, finely sliced (about 4 oz) .
1/2 c sugar .
3/4 tsp ground cardamom .
1 1/2 tbsps honey .
3 c half-and-half
Directions
Step #1 Preheat oven to 325°F Combine half & half, sugar & honey in medium saucepan.
Step #2 Bring to simmer.
Step #3 Remove from heat; stir in the sliced almonds & ground cardamom.
Step #4 Cover up & let steep 30 mins.
Step #5 Strain through fine sieve; discard solids in sieve.
Step #6 Whisk egg yolks in medium bowl to mix.
Step #7 Gradually whisk in half & half mixture.
Step #8 Place six 3/4-c custard c or soufflé dishes in roasting pan.
Step #9 Divide custard mixture among custard c.
Step #10 Pour enough hot water into roasting pan to come halfway up sides of c.
Step #11 Bake custards until set around edges & center moves only slightly when c are carefully shaken, about 45 mins.
Step #12 Remove custards from water.
Step #13 Cool.
Step #14 Cover up & put in the fridge overnight.
Step #15 (Can be prepared 2 days ahead.
Step #16 Keep put in the fridged.
