Arroz Con Pollo Recipe

Ingredients
  • 8 tbsps butter (or 115 g) .
  • 2 c uncooked rice .
  • 1 medium onion, coarsely sliced .
  • 2 large tomatoes, peeled, seeded & sliced .
  • 3 saffron threads .
  • pepper .
  • salt .
  • paprika .
  • 4 c chicken broth .
  • 1 (3 lb) chickens (1 . 2 kg) .
  • 1 sweet green pepper, seeded & sliced .
  • 3 garlic cloves, coarsely sliced

Directions
  • Step #1 Boil chicken in water to cover until almost tender, about 25 mins.
  • Step #2 Cut chicken into small pieces & brown in butter for 5 mins over low flame.
  • Step #3 Place the browned chicken in a casserole.
  • Step #4 Add tomatoes, onion, pepper, & garlic to the cooking butter.
  • Step #5 Cook for five mins over low flame.
  • Step #6 Add chicken broth & saffron & boil for five mins then add rice & cook covered, low flame, for 30 mins or until rice is tender.
  • Step #7 Place in casserole over chicken.
  • Step #8 Serve.
