Sima - Finnish Mead Recipe

Ingredients
  • 1 gallon mineral water .
  • 12 oz sugar .
  • 1 quart mineral water .
  • 1/2 c molasses or honey .
  • 1/4 tsp yeast .
  • 2 lemons .
  • 12 oz brown sugar

Directions
  • Step #1 Wash the lemons & peel them thinly.
  • Step #2 Remove the pith.
  • Step #3 Slice the lemons & place them with the peel & sugar in a sufficiently large vessel.
  • Step #4 Bring half of the water to the boil & pour it over the lemons, peel, honey or maolasses & sugar.
  • Step #5 Stir & leave to stand covered for a while.
  • Step #6 Add the rest of the water cold.
  • Step #7 When the liquid is lukewarm add the yeast.
  • Step #8 Keep the mead at about room temp until it starts to ferment, i.
  • Step #9 e.
  • Step #10 about one day.
  • Step #11 Put a couple of raisins & 1 tsp of sugar into clean bottles, & strain the mead into the bottles.
  • Step #12 Loosely cork the bottles & store them in a cool place.
  • Step #13 The mead is ready when the raisins rise to the surface.
