Buffalo Chips (cookies) Recipe

Ingredients
  • 6 oz chocolate chips .
  • 2 c quick oats (uncooked) .
  • 1 c sliced pecans .
  • 1 c butter .
  • 2 tsps baking powder .
  • 2 tsps vanilla .
  • 4 large eggs .
  • 2 c Rice Krispies .
  • 2 c packed brown sugar .
  • 6 oz butterscotch chips or milk chocolate chips or peanut butter .
  • 2 c granulated sugar .
  • 2 tsps baking soda .
  • 4 c flour .
  • 1 c coconut .
  • 1 c solid shortening

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 I a large mixing bowl, cream butter & shortening; add SUGARS, eggs & vanilla, mix well.
  • Step #3 Stir in oats, rice krispies, baking soda & baking powder; when well mixed, flour, pecans, stir in the coconut, chocolate chips & chips of choice.
  • Step #4 When batter is throughly mixed, measure 1/4 c batter for each cookie on a large ungreased baking sheet.
  • Step #5 Bake 10 to 12 mins, or until edges are golden; for a crisper cookie bake 12 to 15 mins; allow cookies to cool slightly on baking sheet before removing to a wire rack.
