Chicken-and-brie Quesadillas With Chipotle Salsa Recipe

Ingredients
  • 1 (4.5-oz) can sliced green chiles, drained
  • 2 tsps minced canned chipotle chiles in adobo sauce
  • 3 garlic cloves, minced
  • 3 tbsps fresh lime juice
  • 2 c sliced plum tomato
  • 1 c finely sliced cooked chicken
  • 8 (7-inch) flour tortillas
  • 1 small onion, sliced
  • 1/2 tsp salt
  • 5 green onions, minced & divided
  • 1/2 c sliced fresh cilantro, divided
  • 8 oz Brie, trimmed & sliced

Directions
  • Step #1 Stir together first 6 ingredients, 1/4 c green onions, & 1/4 c cilantro.
  • Step #2 Let stand 1 hr.
  • Step #3 Stir together remaining green onions, remaining 1/4 c cilantro, chicken, & sliced green chiles.
  • Step #4 Arrange 4 tortillas on a large baking sheet greased with vegetable cooking spray.
  • Step #5 Top evenly with cheese, & remaining tortillas, chicken mixture, pressing down slightly.
  • Step #6 Bake at 425° for 8 to 10 mins or until cheese melts.
  • Step #7 Cut into wedges, & serve as soon as possible with salsa.
  • Step #8 Note: Freeze remaining chipotle chiles in adobo sauce, if desired.
