Lion's Head Meatballs In Spicy Coconut Sauce Recipe

Ingredients
  • 1/4 c sliced fresh basil
  • 2 tbsps minced peeled fresh ginger
  • 1/3 c sliced green onions
  • 1 tbsp grated lemon rind
  • 1 tbsp low-sodium soy sauce
  • 1 tsp minced hot red chile pepper
  • 1 lb ground round or ground pork
  • 2 tbsps cornstarch
  • 1 tbsp minced peeled fresh ginger
  • 2 tsps minced hot red chile pepper
  • 1 tbsp all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp dark sesame oil
  • 1/2 c soy milk
  •  Meatballs:
  • 1 tbsp sliced green onions
  • 1 tbsp vegetable oil
  • 2 tbsps Thai fish sauce
  • 1/4 c sliced water chestnuts
  • 1/2 c light coconut milk
  •  Sauce:

Directions
  • Step #1 To prepare sauce, mix first 6 ingredients in a small bowl.
  • Step #2 To prepare meatballs, mix ground pork & next 9 ingredients (pork through salt) In a large-ish bowl, & shape mixture into 8 meatballs.
  • Step #3 Heat 1 tbsp vegetable oil In a large-ish nonstick skillet over medium-high heat.
  • Step #4 Add meatballs; cook 7 mins, browning on all sides.
  • Step #5 Drain well.
  • Step #6 Place sauce In a large-ish saucepan; bring to a boil over medium-high heat.
  • Step #7 Add meatballs; cover, reduce heat, & let simmer 8 mins.
  • Step #8 Garnish with basil & rind.
