Chicken Lettuce Wraps With Peanut-miso Sauce Recipe

Ingredients
  • 1 lb skinless, boneless chicken breast halves
  • 12 romaine lettuce leaves
  • 2 c (2-inch) julienne-cut carrot
  • 1/4 c honey
  • 2 tbsps water
  • 1 c (2-inch) julienne-cut seeded peeled cucumber
  • 1/3 c reduced-fat peanut butter
  •  Cooking spray
  • 2 tsps fresh lime juice
  • 3 tbsps yellow miso (soybean paste)
  • 1 c shredded red cabbage
  • 1 c fresh bean sprouts
  • 1/8 tsp ground red pepper
  • 2 c (2-inch) julienne-cut peeled jicama

Directions
  • Step #1 Combine first 6 ingredients in a bowl; stir well with a whisk.
  • Step #2 Set aside.
  • Step #3 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #4 Add chicken; cook 4 mins on each side or until done.
  • Step #5 Cut the chicken into 1/8-inch-thick slices.
  • Step #6 Cut off the raised portion of the main vein of each lettuce leaf.
  • Step #7 Divide chicken evenly among lettuce leaves; top this with carrot, bean sprouts, jicama, cucumber, & cabbage, dividing evenly.
  • Step #8 Roll up, & secure with a pick.
  • Step #9 Serve with sauce.
