Baba Ghanoush With Red Pepper Swirl Recipe

Ingredients
  • 3/4 tsp salt
  • 1/4 c fat-free sour cream
  • 2 garlic cloves, peeled
  • 2 tbsps extravirgin olive oil
  • 1 (7-oz) bottle roasted red bell peppers, drained
  • 3 tbsps tahini (sesame-seed paste)
  • 6 (6-inch) pitas, each cut into 6 wedges
  • 3 (1-lb) eggplants
  • 1/4 tsp freshly ground black pepper
  • 1/4 c fresh lemon juice

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Pierce eggplants several times with a fork; place on a foil wrap-lined baking sheet.
  • Step #3 Bake at 375° for 45 mins or until tender.
  • Step #4 Cut eggplants in half; scoop out pulp.
  • Step #5 Drain eggplant pulp in a colander for 30 mins.
  • Step #6 Place pulp in a food processor/blender; pulse 5 times.
  • Step #7 Add juice & next 5 ingredients (through garlic), & process until almost smooth.
  • Step #8 Remove from processor.
  • Step #9 Combine sour cream & bell peppers in food processor/blender, & process until smooth.
  • Step #10 Swirl bell pepper mixture into eggplant mixture, if desired.
  • Step #11 Serve with pita wedges.
