Red Snapper Seviche Recipe

Ingredients
  •  Garnish: lime wedges
  • 1/2 tsp fine-grained sea salt
  • 1 c fresh lime juice
  • 1 to 2 red chile peppers, seeded & minced
  • 1 1/2 lbs red snapper fillets, skinned
  • 1/2 tsp freshly ground pepper
  • 3 tbsps extra-virgin olive oil
  • 3 tbsps tomato juice
  •  Radicchio
  • 4 plum tomatoes, seeded & sliced
  • 1/3 c sliced fresh cilantro
  • 1/2 c fresh orange juice
  • 1 small red bell pepper, sliced
  • 3 tbsps minced red onion

Directions
  • Step #1 Cut red snapper into 1 1/2-inch strips.
  • Step #2 Place in nonaluminum bowl.
  • Step #3 Add lime juice & orange juice; toss carefully.
  • Step #4 Cover up & put in the fridge 2 to 3 hrs or until fish is completely opaque.
  • Step #5 Drain & discard liquid.
  • Step #6 Combine red snapper with plum tomatoes through ground pepper; toss carefully.
  • Step #7 Cover up & chill 1 hr.
  • Step #8 Serve in radicchio-lined compotes.
  • Step #9 Garnish each serving with lemon wedges.
