Shrimp-and-black Bean Nachos Recipe

Ingredients
  •  Remaining ingredients:
  • 1/2 c sliced red onion
  • 3/4 lb medium shrimp, cooked, peeled, & sliced
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 2 tbsps fresh lime juice
  • 1/2 c sliced peeled avocado
  • 30 baked tortilla chips
  • 3/4 c sliced fresh cilantro
  • 1 c drained canned black beans
  • 2 c sliced tomato
  • 1 tbsp minced seeded serrano chile
  •  Shrimp salsa:
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp salt

Directions
  • Step #1 To prepare shrimp salsa, mix first 9 ingredients In a large-ish bowl; toss well.
  • Step #2 Cover up & put in the fridge 30 mins.
  • Step #3 Add tomato & avocado; stir well.
  • Step #4 Place the beans & cumin in a food processor/blender or mixer, & process 30 seconds or until smooth.
  • Step #5 Spread each chip with 1 tsp black-bean mixture.
  • Step #6 Top with 1 tbsp shrimp salsa.
  • Step #7 Serve as soon as possible.
