Wild Rice And Leek Soup Recipe

Ingredients
  • 4 c fat-free, less-sodium chicken broth
  •  Cooking spray
  • 4 1/2 c water, divided
  • 1/8 tsp freshly ground black pepper
  • 1/2 tsp salt, divided
  • 2 bay leaves
  • 4 c thinly sliced leek (about 3 large)
  • 1/4 c whipping cream
  • 1 c sliced peeled red potato
  • 1/2 c uncooked wild rice
  • 2 tsps minced fresh thyme

Directions
  • Step #1 Bring 3 1/2 c water, 1/4 tsp salt, & bay leaves to a boil In a large-ish saucepan.
  • Step #2 Stir in rice.
  • Step #3 Reduce heat, & let simmer 50 mins or until rice is tender.
  • Step #4 Remove rice from pan, draining if necessary.
  • Step #5 Discard bay leaves.
  • Step #6 Heat pan over medium-high heat.
  • Step #7 Coat pan with cooking spray.
  • Step #8 Add leek & thyme; sauté 5 mins.
  • Step #9 Stir in remaining 1 c water, cooked rice, potato, broth, remaining 1/4 tsp salt, & pepper; bring to a boil.
  • Step #10 Reduce heat, & let simmer 30 mins or until potato is tender.
  • Step #11 Place 2 c rice mixture in a mixer.
  • Step #12 Remove center piece of mixer lid (to allow steam to escape); secure mixer lid on mixer.
  • Step #13 Place a clean towel over opening in mixer lid (to avoid spills).
  • Step #14 Blend until smooth.
  • Step #15 Return pureed mixture to pan.
  • Step #16 Stir in cream.
  • Step #17 Cook over med-heat/flame just until heated.
