Pesto-goat Cheese Spread Recipe

Ingredients
  • 1 (11-oz) log goat cheese
  • 1/2 c pine nuts, toasted
  • 2 c loosely packed fresh basil leaves
  • 2 tbsps balsamic vinegar
  • 1 (8-oz) package cream cheese, softened
  • 3 garlic cloves

Directions
  • Step #1 Process all ingredients in a food processor/blender until smooth.
  • Step #2 Chill 2 hrs before serving.
  • Step #3 Store in refrigerator up to 1 week, or freeze in airtight containers up to 4 months.
  • Step #4 Serve with toasted pita chips or sliced baguettes.
  • Step #5 Shape cheese mixture into logs, & wrap in wax paper; slice chilled logs into 1/2-inch rounds.
  • Step #6 Dip rounds in lightly beaten egg; dredge in Italian breadcrumbs.
  • Step #7 Pan-fry over medium-high heat in a little butter 1 min on each side or until golden, & serve warm over a crisp, green salad.
