Ingredients
1/2 tsp salt
2/3 c Monte Alban Guacamole
30 medium shrimp, peeled & deveined (about 1 lb)
1/4 c sliced green onions
6 (6-inch) corn tortillas
2 tbsps chili powder
Cooking spray
Directions
Step #1 Prepare grill or broiler.
Step #2 Thread 5 shrimp onto each of 6 (12-inch) skewers.
Step #3 Combine the chili powder & salt; sprinkle both sides of shrimp with the chili powder mixture.
Step #4 Place in a shallow baking dish; cover & marinate in refrigerator 15 mins.
Step #5 Place kebabs on a grill rack or broiler pan coated with cooking spray; cook 2 mins on each side or until done.
Step #6 Preheat oven to 350°.
Step #7 Place the tortillas directly on the middle rack in oven.
Step #8 Bake at 350° for 7 mins (tortillas should still be slightly pliable).
Step #9 Top each tortilla with about 2 tbsps Monte Alban Guacamole & 5 shrimp.
Step #10 Sprinkle top evenly with green onions.
