Easy Smoked Cheddar Recipe

Ingredients
  •  Cheesecloth
  •  Vegetable cooking spray
  • 2 (16-oz) blocks Cheddar cheese
  •  Hickory wood chips

Directions
  • Step #1 Soak wood chips in water for at least 30 mins.
  • Step #2 Prepare charcoal fire in smoker; let burn 15 to 20 mins.
  • Step #3 Place 1 cheese block on top of the other; coat with cooking spray.
  • Step #4 Place lengthwise in center of a 24-inch piece of cheesecloth.
  • Step #5 Tightly wrap cheesecloth around stacked cheese.
  • Step #6 Place wrapped cheese crosswise in center of another 24-inch piece cheesecloth; tightly wrap.
  • Step #7 Drain chips, & place on coals.
  • Step #8 Place water pan in smoker; add water to depth of fill line.
  • Step #9 Place wrapped cheese, seam side down, on upper food rack; cover with smoker lid.
  • Step #10 Cook cheese 2 hrs.
