Salmon-sweet Onion Quiche Recipe

Ingredients
  • 2 medium Vidalia or other sweet onions, very thinly sliced (about 4 c)
  • 1 tbsp sliced fresh basil
  • 3/4 lb hot-smoked salmon, flaked
  • 1/2 (15-oz) package put in the fridged piecrust
  • 1/8 tsp crushed red pepper
  • 2 large eggs
  • 1 (10-oz) container put in the fridged Alfredo sauce
  • 1 tbsp olive oil
  • 1/2 c shredded white cheddar cheese
  •  Garnish: sliced fresh basil
  • 1 tbsp butter

Directions
  • Step #1 Place crust in an ungreased 9-inch pie plate; trim off excess pastry along edges.
  • Step #2 Fold edges under & crimp.
  • Step #3 Fill with pie weights, rice, or dried beans.
  • Step #4 Bake at 375° for 10 to 12 mins or until just beginning to brown.
  • Step #5 Cool; remove weights.
  • Step #6 Heat olive oil & butter In a large-ish skillet over med-heat/flame.
  • Step #7 Add onions; cook, covered, 30 to 40 mins or until golden.
  • Step #8 Remove from heat.
  • Step #9 Add salmon & cheese; mix well.
  • Step #10 Combine eggs & next 3 ingredients in a small bowl with a wire whisk.
  • Step #11 Stir in salmon mixture.
  • Step #12 Pour mixture into prepared crust.
  • Step #13 Bake at 350° for 40 to 45 mins or until center is set.
  • Step #14 Let stand 10 mins.
  • Step #15 Garnish with fresh basil, if desired.
  • Step #16 Wine note: The sweetness of the onions & the power of salmon are the key components.
  • Step #17 Again I gravitate to Germany with something a bit more substantial.
