Peach And Brie Quesadillas With Lime-honey Dipping Sauce Recipe

Ingredients
  • 1/2 tsp grated lime rind
  • 2 tbsps honey
  • 4 (8-inch) fat-free flour tortillas
  •  Cooking spray
  •  Quesadillas:
  • 1 c thinly sliced peeled firm ripe peaches (about 2 large)
  • 2 tsps fresh lime juice
  •  Sauce:
  • 3 oz Brie cheese, thinly sliced
  • 1 tsp brown sugar
  •  Chive strips (optional)
  • 1 tbsp sliced fresh chives

Directions
  • Step #1 To prepare sauce, mix first 3 ingredients, stirring with a whisk; set aside.
  • Step #2 To prepare quesadillas, mix peaches, & sugar, 1 tbsp chives, tossing carefully to coat.
  • Step #3 Heat a large nonstick skillet over medium-high heat.
  • Step #4 Arrange one-fourth of cheese & one-fourth of peach mixture over half of each tortilla; fold tortillas in half.
  • Step #5 Coat pan with cooking spray.
  • Step #6 Place 2 quesadillas in pan; cook 2 mins on each side or until tortillas are lightly browned & crisp.
  • Step #7 Remove from pan; keep warm.
  • Step #8 Repeat procedure with remaining quesadillas.
  • Step #9 Cut each quesadilla into 3 wedges; serve this with sauce.
  • Step #10 Garnish with chive strips, if desired.
