Warm Spiced Lentils Recipe

Ingredients
  • 1/8 tsp ground red pepper
  • 4 whole cloves
  • 1/2 tsp Hungarian sweet paprika
  • 1 (2-inch) lemon rind strip
  • 8 lemon wedges
  • 3 garlic cloves, minced
  • 1/4 c sliced fresh cilantro
  • 1 small onion, peeled
  • 3/4 tsp ground cumin
  • 3 tbsps sliced fresh flat-leaf parsley
  • 1/2 tsp ground turmeric
  • 1/2 tsp salt
  • 2 bay leaves
  • 1 1/2 tbsps fresh lemon juice
  • 1 c sliced seeded tomato
  • 1 tbsp extravirgin olive oil
  • 3/4 tsp ground ginger
  • 3/4 c sliced red onion
  • 1/8 tsp freshly ground black pepper
  • 1 c petite green lentils

Directions
  • Step #1 Place lentils In a large-ish saucepan, & cover with water to 2 inches above lentils.
  • Step #2 Stud whole onion with cloves.
  • Step #3 Add studded onion, bay leaves, & rind to pan; bring to a boil.
  • Step #4 Cover up, reduce heat, & let simmer 20 mins or until lentils are just tender.
  • Step #5 Drain well.
  • Step #6 Discard onion, bay leaves, & rind.
  • Step #7 Heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #8 Add sliced red onion; cook 5 mins or until tender, stirring every once in awhile.
  • Step #9 Stir in tomato & the next 6 ingredients (through garlic); cook 2 mins.
  • Step #10 Stir in lentils, cilantro, & parsley; cook 2 mins.
  • Step #11 Stir in juice, salt, & black pepper.
  • Step #12 Serve warm with lemon wedges.
