Ingredients
1 lb medium shrimp, cooked & peeled
2 tbsps fresh lime juice
1 tsp dark sesame oil
Cooked & peeled shrimp (optional)
1 tbsp minced peeled fresh ginger
1/4 c (2 oz) 1/3-less-fat cream cheese
2 tbsps light mayonnaise
1 (12.3-oz) package reduced-fat firm tofu, drained
Cilantro sprig (optional)
1 garlic clove, minced
3 tbsps sliced fresh cilantro
2 tsps Thai fish sauce or low-sodium soy sauce
3 tbsps minced green onions
Directions
Step #1 Place the first 3 ingredients in a food processor/blender, & process until minced.
Step #2 Add lime juice, fish sauce, & tofu; pulse until mixed.
Step #3 Heat oil in a small skillet over med-heat/flame; sauté ginger & garlic 2 mins.
Step #4 Add to shrimp mixture, & pulse until mixd.
Step #5 Add onions & sliced cilantro, & pulse 3 to 4 times.
Step #6 Spoon into a bowl; cover & chill 1 hr.
Step #7 Garnish dip with extra shrimp & cilantro sprig, if desired.
