Thai Shrimp Dip Recipe

Ingredients
  • 1 lb medium shrimp, cooked & peeled
  • 2 tbsps fresh lime juice
  • 1 tsp dark sesame oil
  •  Cooked & peeled shrimp (optional)
  • 1 tbsp minced peeled fresh ginger
  • 1/4 c (2 oz) 1/3-less-fat cream cheese
  • 2 tbsps light mayonnaise
  • 1 (12.3-oz) package reduced-fat firm tofu, drained
  •  Cilantro sprig (optional)
  • 1 garlic clove, minced
  • 3 tbsps sliced fresh cilantro
  • 2 tsps Thai fish sauce or low-sodium soy sauce
  • 3 tbsps minced green onions

Directions
  • Step #1 Place the first 3 ingredients in a food processor/blender, & process until minced.
  • Step #2 Add lime juice, fish sauce, & tofu; pulse until mixed.
  • Step #3 Heat oil in a small skillet over med-heat/flame; sauté ginger & garlic 2 mins.
  • Step #4 Add to shrimp mixture, & pulse until mixd.
  • Step #5 Add onions & sliced cilantro, & pulse 3 to 4 times.
  • Step #6 Spoon into a bowl; cover & chill 1 hr.
  • Step #7 Garnish dip with extra shrimp & cilantro sprig, if desired.
