Chicken-fried Steak Fingers With Creole Mustard Sauce Recipe

Ingredients
  •  Vegetable oil
  • 2 large eggs
  • 1/4 tsp ground red pepper
  • 2 tsps Cajun seasoning
  • 1 c all-purpose flour
  •  Creole Mustard Sauce
  • 1 tbsp Cajun seasoning
  • 2 tbsps hot sauce
  • 1 (2-lb) flank steak
  •  recipe Basic Marinade
  • 1/2 c fine, dry breadcrumbs

Directions
  • Step #1 Stir Cajun seasoning into Basic Marinade until mixed.
  • Step #2 Place flank steak in a heavy-duty zip-top plastic bag; add marinade mixture.
  • Step #3 Seal & chill 3 hrs, turning every once in awhile.
  • Step #4 Remove steak from marinade, discarding marinade.
  • Step #5 Cut steak in half lengthwise; cut halves diagonally across the grain into 1/2-inch-thick strips.
  • Step #6 Whisk together eggs & hot sauce.
  • Step #7 Combine flour & next 3 ingredients.
  • Step #8 Dip steak strips into egg mixture; dredge in flour mixture.
  • Step #9 Cover up & chill 1 hr.
  • Step #10 Pour oil to a depth of 4 inches in a Dutch oven; heat to 375°.
  • Step #11 Fry steak strips in batches 10 mins or until golden.
  • Step #12 Serve with Creole Mustard Sauce.
