Ingredients
  • 1/4 c minced onion
  • 1 tbsp balsamic vinegar
  • 1 c sliced tomato
  • 2 tsps olive oil
  • 1 c sliced zucchini
  • 2 tbsps sliced pitted kalamata olives
  • 1/2 c sliced drained canned artichoke hearts
  • 1/2 c sliced fresh basil
  • 1/3 c sliced bottled roasted red bell peppers

Directions
  • Step #1 Combine all ingredients in a medium bowl; cover & chill in the fridge.
