Fingerling Potato Hash With Pancetta And Onion Recipe

Ingredients
  • 1 lb fingerling or small new potatoes
  •  Salt & freshly ground pepper
  • 2 oz sliced pancetta, cut into 3/4-inch pieces
  • 2 tbsps unsalted butter
  • 1/2 c finely sliced sweet onion
  • 1 tbsp sliced parsley

Directions
  • Step #1 In a medium saucepan, cover the potatoes with water & bring to a boil.
  • Step #2 Reduce the heat to moderately high & let simmer until tender, about 20 mins; drain.
  • Step #3 Let the potatoes cool slightly, then cut into 1-inch pieces.
  • Step #4 In a medium cast-iron skillet, cook the pancetta over moderately high heat for 2 mins.
  • Step #5 Transfer the pancetta to a plate.
  • Step #6 Melt the butter in the skillet.
  • Step #7 Add the potatoes & cook over moderate heat, turning every once in awhile, until golden & crisp, about 7 mins.
  • Step #8 Add the onion & pancetta, season this with salt & pepper & cook this until the onion is translucent, about 5 mins.
  • Step #9 Stir in the parsley & serve right away.
