Fried Green Tomatillos With Jalapeño Dipping Sauce Recipe

Ingredients
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 1 c bacon drippings
  • 2 tbsps lime juice
  • 1/2 c milk
  • 1 tsp grated lime rind
  • 1 large egg
  • 1/2 c jalapeño pepper jelly
  • 1 c cracker meal
  • 12 medium tomatillos, sliced
  • 1/2 c all-purpose flour
  • 2 c vegetable oil

Directions
  • Step #1 Cook jelly & lime juice in a small saucepan over med-heat/flame, stirring often, until jelly melts.
  • Step #2 Remove from heat; stir in the lime rind, & set aside.
  • Step #3 Combine flour, 1/2 tsp salt, & 1/2 tsp pepper in a shallow dish.
  • Step #4 Combine milk & egg in a small bowl, stirring well.
  • Step #5 Combine cracker meal, remaining 1/2 tsp salt, & remaining 1/2 tsp pepper in a shallow dish.
  • Step #6 Coat tomatillo slices in flour mixture, dip in milk mixture, & dredge in cracker meal mixture.
  • Step #7 Heat vegetable oil & bacon drippings to 374° in a deep fat fryer.
  • Step #8 Fry tomatillo slices in batches 2 to 3 1/2 mins or until golden.
  • Step #9 Drain on paper towels, & serve as soon as possible with jalapeno jelly mixture.
  • Step #10 Note: To fry whole tomatillos, peel back husks, leaving stem ends attached; proceed as directed.
