Shrimp With Wasabi Mayo Recipe

Ingredients
  • 2 tbsps sliced fresh mint leaves
  • 1 1/2 lbs (31 to 40 per lb.) shelled cooked shrimp, rinsed & drained
  •  Fresh mint sprig, rinsed
  • 2 tbsps lemon juice
  •  Salt
  • 1 c regular or reduced-fat mayonnaise
  • 2 tbsps dried wasabi powder

Directions
  • Step #1 In a small bowl, mix wasabi powder with 2 tbsps water until smooth.
  • Step #2 In a food processor/blender or mixer, lemon juice, mint leaves, whirl mayonnaise, & three-fourths of the wasabi mixture until smooth.
  • Step #3 Taste, & add salt & more of the wasabi mixture if desired; save remaining for other uses.
  • Step #4 Scrape into a bowl & garnish with mint sprig.
  • Step #5 Serve with shrimp to dip into sauce.
