Parmesan-crusted Calamari Kebabs Recipe

Ingredients
  • 1 large egg white, lightly beaten
  • 1/2 tsp salt
  • 1 lb cleaned calamari tubes (about 15 )
  •  Roasted Red Pepper & Basil Sauce
  • 1/2 c panko*
  • 1/2 tsp freshly ground pepper
  • 30 (6-inch) wooden skewers
  • 2 tbsps extra-virgin olive oil
  • 1/2 c freshly grated Parmesan cheese

Directions
  • Step #1 Slice tubes in half lengthwise.
  • Step #2 Thread onto skewers.
  • Step #3 Combine cheese & next 4 ingredients in a shallow dish.
  • Step #4 Brush egg white lightly over squid.
  • Step #5 Dredge squid into breadcrumb mixture.
  • Step #6 Place skewers on a lightly greased rack in a broiler pan.
  • Step #7 Broil calamari 5 1/2 inches from heat 2 to 4 mins or until golden.
  • Step #8 Serve warm with Roasted Red Bell Pepper & Basil Sauce.
  • Step #9 *Panko, or Japanese breadcrumbs, is available in Asian or gourmet grocery stores.
