Step #1 In a bowl, 1/2 c falafel mix, mix sausage, & 1/2 c water; mix well.
Step #2 Put remaining 1/4 c falafel mix in a small bowl.
Step #3 Scoop meat (mixture is soft) into 1-tbsp portions & drop into falafel mix; roll to coat.
Step #4 Place balls slightly apart on an oiled 10- by 15-inch pan.
Step #5 Bake in a 500° oven for 5 mins; turn balls (or shake pan) & continue to bake this until lightly browned & no longer pink in the center (cut to test), about 5 mins longer.
Step #6 Add salt to taste.
