White Bean-and-shrimp Crostini Recipe

Ingredients
  • 1/8 tsp pepper
  • 1/2 c drained canned Great Northern beans
  • 1/2 lb small shrimp, peeled & deveined
  • 8 (1/2-inch-thick) Italian bread slices, toasted (about 4 oz)
  • 8 small fresh sage leaves (optional)
  • 2 garlic cloves, minced
  • 1/8 tsp salt
  • 2 tsps olive oil

Directions
  • Step #1 Heat oil in a medium nonstick skillet over med-heat/flame.
  • Step #2 Add the shrimp, & sauté 1 min.
  • Step #3 Add garlic, & sauté an extra min or until shrimp are done.
  • Step #4 Remove shrimp mixture from skillet, & set aside.
  • Step #5 Add beans, & pepper to skillet; cook over med-heat/flame 1 min, salt, stirring frequently.
  • Step #6 Remove from heat, & mash beans.
  • Step #7 Spread bean mixture evenly over bread slices.
  • Step #8 Divide shrimp mixture evenly among bread slices; garnish with sage leaves, if desired.
