Ingredients
2 c cranberries, fresh or thawed frozen
1/4 tsp mixed whole pickling spice
6 glacéed chestnuts, cut into quarters (optional)
1 baguette (8 oz.)
30 to 36 inner butter lettuce leaves, rinsed & crisped
2 tbsps butter or margarine, melted
About 1/2 lb cheddar cheese
About 3/4 c sugar
1 tsp kosher salt
Directions
Step #1 Sort cranberries & discard any soft or decayed fruit.
Step #2 Rinse berries.
Step #3 In a 1 1/2- to 2-quart pan, mix cranberries, 3/4 c sugar, & pickling spice.
Step #4 Cover up & set over low heat/flame.
Step #5 Stir every once in awhile until cranberries are translucent, & a syrup forms, sugar dissolves, about 30 mins.
Step #6 Remove from heat, uncover, & let this stand until cranberries are warm or cool.
Step #7 Meanwhile, cut baguette diagonally into 30 to 36 slices.
Step #8 Lightly brush 1 side of each slice with butter.
Step #9 Set slices, buttered side up, in a 10- by 15-inch pan.
Step #10 Mix salt with 1 tsp sugar & lightly sprinkle it over bread.
Step #11 Bake baguette slices in a 325° oven until bread is dry & golden at edges, about 20 mins.
Step #12 Use warm or cool.
Step #13 With a cheese spade or vegetable slicer, cut cheese into thin slices & mound lightly in a dish.
Step #14 Put cranberries, lettuce, & chestnuts in separate small bowls.
Step #15 Arrange baguette slices in a basket.
Step #16 To eat, set a baked baguette slice on a lettuce leaf & top this with a slice of cheese, candied cranberries, & a chestnut piece.
