Smoked Salmon Puffs Recipe

Ingredients
  • 1/4 c sliced green onions
  • 1/4 tsp freshly ground black pepper
  • 2 oz hot-smoked (kippered) salmon, sliced
  •  Cooking spray
  • 1 c bread flour (about 4 3/4 oz)
  • 2 large eggs, lightly beaten
  • 4 large egg whites, lightly beaten
  • 2 tbsps butter
  • 1 c water
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 Combine flour, salt, & pepper In a large-ish bowl.
  • Step #4 Combine 1 c water & butter in a medium saucepan; bring to a boil over medium-high heat.
  • Step #5 Add flour mixture, & stir constantly with a wooden spoon until mixture forms a ball & pulls away from the sides of the pan (about 30 seconds).
  • Step #6 Cook for 1 min, stirring constantly.
  • Step #7 Remove from heat.
  • Step #8 Transfer flour mixture to a large bowl.
  • Step #9 Add eggs, 1 at a time, beating well with a mixer after each addition.
  • Step #10 Add egg whites, 1 at a time, beating well after each addition.
  • Step #11 Stir in onions & salmon.
  • Step #12 Spoon salmon mixture by rounded tspfuls 1 inch apart on a baking sheet coated with cooking spray.
  • Step #13 Bake at 425° for 10 mins.
  • Step #14 Reduce oven temperature to 350° (do not remove puffs from oven).
  • Step #15 Bake an extra 20 mins or until puffs have risen, lightly browned, & feel dry on the top & bottom.
  • Step #16 Remove from pan; cool completely on wire racks.
