Sherried Mushroom Spread Recipe

Ingredients
  • 2 tbsps all-purpose flour
  • 2 shallots, minced
  • 1/4 tsp ground white pepper
  • 1 tbsp sliced fresh tarragon or 1 tsp dried tarragon
  • 1 c chicken broth
  • 3/4 tsp salt
  • 1 lb shiitake mushrooms, finely sliced (about 6 c)
  • 1/4 c unsalted butter
  • 1/4 c sour cream
  •  Garnishes: thinly sliced green onion, sliced fresh tarragon, sliced shiitake mushroom
  • 1/2 c dry sherry

Directions
  • Step #1 Melt butter In a large-ish skillet over medium-high heat; add mushrooms & shallots.
  • Step #2 Sauté 6 to 7 mins or until mushrooms release moisture.
  • Step #3 Sprinkle top with salt & pepper; stir well.
  • Step #4 Sprinkle top with flour, stirring to coat mushrooms; cook 1 min.
  • Step #5 Add sherry, uncovered, 10 to 15 mins or until liquid is absorbed, & tarragon; simmer, broth, stirring every once in awhile.
  • Step #6 Remove from heat; stir in the sour cream.
  • Step #7 Spoon mixture into a serving bowl.
  • Step #8 Garnish, if desired.
  • Step #9 Spread on melba toast rounds or crostini.
