Vegetarian Gyoza With Spicy Dipping Sauce Recipe

Ingredients
  • 2 tsps grated peeled fresh ginger
  • 4 c finely sliced green cabbage
  • 1/4 c low-sodium soy sauce
  • 3 garlic cloves, minced
  • 1/4 c sliced green onions
  • 4 c sliced shiitake mushroom caps (about 3/4 lb)
  • 2 tbsps sliced green onions
  • 2 tbsps low-sodium soy sauce
  • 1/2 tsp crushed red pepper
  •  Sauce:
  •  Cooking spray
  • 24 lettuce leaves
  •  Filling:
  • 2/3 c water
  • 1/3 c rice vinegar
  • 1/2 tsp salt
  • 2 tbsps mirin (sweet rice wine)
  •  Wrappers:
  • 2 c all-purpose flour
  •  Remaining ingredients:
  • 1/4 tsp dark sesame oil
  • 2 tbsps peanut oil, divided

Directions
  • Step #1 To prepare sauce, mix first 4 ingredients; set aside.
  • Step #2 To prepare wrapper, lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & water in a bowl.
  • Step #4 Turn dough out onto a floured surface; knead 5 mins.
  • Step #5 Cover up dough; let rest 30 mins.
  • Step #6 To prepare filling, heat a large non-stick skillet coated with cooking spray over medium-high heat.
  • Step #7 Add mushrooms; cook 3 mins or until moisture evaporates, stirring frequently.
  • Step #8 Add cabbage; cook 3 mins or until softened, stirring frequently.
  • Step #9 Stir in 2 tbsps green onions & next 6 ingredients (2 tbsps green onions through garlic); simmer 2 mins.
  • Step #10 Remove from heat; set aside.
  • Step #11 Divide dough into 4 equal portions.
  • Step #12 Roll each portion into a 1-inch-thick rope.
  • Step #13 Cut each rope into 12 equal pieces.
  • Step #14 Shape each dough piece into a ball.
  • Step #15 Roll each ball into a 4-inch circle on a floured surface (cover circles with a damp towel to prevent drying).
  • Step #16 Working with 1 wrapper at a time, spoon 2 tsps mushroom mixture into center of wrapper.
  • Step #17 Fold in half.
  • Step #18 Fold top edge of wrapper at 1/2-inch intervals to form pleats, pressing against bottom edge to seal.
  • Step #19 Place dumplings, pleated sides down, on a large baking sheet dusted with flour; cover loosely with towel to prevent drying.
  • Step #20 Line each tier of a 2-tiered (10-inch) bamboo steamer with 3 lettuce leaves.
  • Step #21 Arrange 6 dumplings, 1-inch apart, in each steamer basket.
  • Step #22 Stack tiers; cover with steamer lid.
  • Step #23 Add water to a large skillet to a depth of 1 inch; bring to a boil.
  • Step #24 Place steamer in pan, & steam dumplings 5 mins.
  • Step #25 Remove dumplings from steamer.
  • Step #26 Repeat procedure with remaining lettuce & dumplings.
  • Step #27 Heat 1 1/2 tsps oil In a large-ish non-stick skillet over medium-high heat.
  • Step #28 Add 12 dumplings; cook 1 1/2 mins on each side or until browned.
  • Step #29 Repeat procedure 3 times with remaining oil & dumplings.
  • Step #30 Serve with sauce.
