Yogurt-cucumber Dip Recipe

Ingredients
  • 1 tsp salt, divided
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/4 tsp freshly ground black pepper
  • 2 c plain low-fat yogurt
  • 1 1/4 c seeded, finely sliced English cucumber
  • 2 tbsps sliced fresh mint

Directions
  • Step #1 Place the sliced cucumber in a colander, & sprinkle with 3/4 tsp salt.
  • Step #2 Toss well, & drain for 30 mins.
  • Step #3 Place the cucumber on several layers of paper towels, & cover with extra paper towels.
  • Step #4 Let the cucumber stand for 5 mins, pressing down every once in awhile to absorb any excess water.
  • Step #5 While cucumber drains, spoon yogurt into a colander lined with a double thickness of paper towels or a coffee filter.
  • Step #6 Let stand 5 mins.
  • Step #7 Scrape into a bowl using a rubber spatula.
  • Step #8 Stir in cucumber, mint, pepper, oil, remaining 1/4 tsp salt, & garlic.
  • Step #9 Refrigerate, covered, until ready to serve.
