Sweet-and-spicy Chipotle Chicken Wings Recipe

Ingredients
  • 1 tbsp grated lime rind (about 3 limes)
  • 1 tsp pepper
  •  Peanut or vegetable oil
  • 4 to 5 lbs chicken wings
  • 1/4 tsp ground red pepper
  • 1 c all-purpose flour
  • 1 (15-oz) can tomato sauce
  • 1/2 c honey
  • 1/4 c chipotle-flavored hot sauce
  • 1 tbsp salt
  • 2 tbsps butter
  • 3 tbsps fresh lime juice

Directions
  • Step #1 Heat tomato sauce & butter in a small saucepan over med-heat/flame, stirring until butter melts.
  • Step #2 Stir in honey & next 4 ingredients, & bring to a boil.
  • Step #3 Reduce heat, & let simmer, stirring often, 5 mins.
  • Step #4 Set tomato sauce mixture aside.
  • Step #5 Cut off wingtips, & discard.
  • Step #6 Cut wings in half at joint, if desired.
  • Step #7 Sprinkle top wings evenly with salt & pepper; dredge lightly in flour, shaking off excess.
  • Step #8 Pour oil to a depth of 1 1/2 inches into a large, deep skillet or Dutch oven; heat oil to 375°.
  • Step #9 Fry wings, in 3 batches, 8 mins per batch or until golden & crispy.
  • Step #10 Remove wings from oil using a slotted spoon; drain on layers of paper towels.
  • Step #11 (Allow oil to return to 375° before adding next batch of wings.
  • Step #12 )Place wings In a large-ish bowl.
  • Step #13 Drizzle with tomato sauce mixture, tossing well to coat.
  • Step #14 Let stand 5 mins before serving.
