Coconut Walnut Biscotti Recipe

Ingredients
  • 1 tsp baking powder
  • 2 eggs
  • 1 c sliced walnuts
  • 1 c white sugar
  • 1/2 c butter, softened
  • 1/2 tsp salt
  • 1/2 c flaked coconut
  • 3 1/2 c all-purpose flour
  • 1 tsp coconut extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a medium bowl, cream together the sugar & butter.
  • Step #3 Stir in the coconut extract & the eggs.
  • Step #4 Combine the flour, baking powder, & salt, stir in theto the creamed mixture.
  • Step #5 Finally, fold in the coconut & walnuts.
  • Step #6 Divide dough into 2 pieces.
  • Step #7 Roll each piece out into a log about 10 inches long.
  • Step #8 Place them on an unprepared cookie sheet & flatten them until they are about 3 inches wide.
  • Step #9 Bake for 30 to 35 mins in the preheated oven, until firm.
  • Step #10 Cool on baking sheet for 10 to 15 mins.
  • Step #11 Slice the logs crosswise into 1/2 inch wide slices.
  • Step #12 Place slices cut side down onto the baking sheet.
  • Step #13 Return to the oven for an extra 15 mins, until crisp & light brown.
  • Step #14 Cool & store this in an airtight container.
