Ingredients
1 3/4 lbs skinless, boneless chicken breast, sliced
3 garlic cloves, sliced
1/2 c currants
2 tbsps sugar
1 tsp olive oil
1 1/4 tsps salt
3/4 c water
1/2 c fat-free sour cream
1 tbsp sliced peeled ginger
1 1/2 tsps ground coriander
3/4 c shredded coconut, divided
1 1/2 tsps curry powder
2 1/2 c sliced onion
35 sheets frozen phyllo dough, thawed & divided

Directions
Step #1 Preheat oven to 400°.
Step #2 Combine onion, ginger, & garlic in a food processor/blender; process until finely sliced.
Step #3 Heat oil In a large-ish nonstick skillet over medium-high heat.
Step #4 Add onion mixture; sauté 5 mins or until lightly browned.
Step #5 Add curry & coriander; cook 1 min, stirring constantly.
Step #6 Add water, salt, currants, sugar, & chicken; bring to a boil.
Step #7 Cover up, reduce heat, & let simmer 20 mins.
Step #8 Uncover; cook 20 mins or until most of liquid evaporates.
Step #9 Remove from heat, & cool slightly.
Step #10 Stir in sour cream.
Step #11 Place the chicken mixture in food processor/blender; pulse until finely sliced.
Step #12 Place 1 phyllo sheet on a large cutting board or work surface (cover remaining dough to prevent drying); lightly coat with cooking spray.
Step #13 Sprinkle top with 1 tsp coconut.
Step #14 Repeat layers 4 times.
Step #15 Cut crosswise into 4 strips.
Step #16 Spoon about 2 tbsps chicken mixture onto one end of each strip.
Step #17 Fold 1 corner of edge over mixture, forming a triangle; continue folding back & forth into a triangle to end of strip.
Step #18 Repeat procedure with remaining phyllo, chicken mixture, cooking spray, & coconut.
Step #19 Place triangles on a large baking sheet coated with cooking spray; coat with cooking spray.
Step #20 Bake at 400° for 18 mins or until golden brown.
