Crab Patties With Pistachio-avocado Butter Recipe

Ingredients
  • 2 tbsps fresh lemon juice
  • 1/2 c all-purpose flour
  •  Pistachio-Avocado Butter
  • 1/2 tsp grated lemon zest
  • 1 c fresh breadcrumbs
  • 1/4 c peanut oil
  • 2 green onions, finely sliced
  • 1 tbsp grated fresh ginger
  • 2 tbsps chili sauce
  • 2 large eggs, lightly beaten
  • 1 tbsp Dijon mustard
  • 2 tbsps sliced fresh cilantro
  • 1 lb fresh lump crabmeat, drained & picked

Directions
  • Step #1 Combine first 10 ingredients In a large-ish bowl, stirring carefully.
  • Step #2 Shape mixture into 32 (2-inch) patties (about 2 tbsps mixture each), cover, & chill 30 mins.
  • Step #3 Coat both sides of patties in flour.
  • Step #4 Cook patties, in batches, in hot oil In a large-ish skillet over med-heat/flame 2 to 3 mins on each side or until golden.
  • Step #5 Add extra oil after each batch, if necessary.
  • Step #6 Drain on paper towels.
  • Step #7 Serve as soon as possible with Pistachio-Avocado Butter.
