Vegetable And Tofu Lettuce Wraps With Miso Sambal Recipe

Ingredients
  • 2 tbsps white miso (soybean paste)
  • 1/2 avocado, peeled & thinly sliced
  • 12 large Boston lettuce leaves
  • 1 1/2 tbsps sugar
  • 1 1/2 tsps dark sesame oil
  •  Wraps:
  • 2 tbsps sliced peeled fresh ginger
  • 2 tbsps chile paste with garlic (such as Sambal oelek)
  • 1 c matchstick-cut English cucumber
  • 2 tbsps rice wine vinegar
  • 2 tbsps sliced dry-roasted peanuts
  • 1/2 c cilantro sprigs
  • 1 (12.3-oz) package reduced-fat firm tofu, drained & cut into 1/2-inch-thick strips
  •  Miso sambal:

Directions
  • Step #1 To prepare miso sambal, mix the first 6 ingredients in a mixer, & process until smooth.
  • Step #2 To prepare wraps, peanuts, cilantro, divide cucumber, tofu, & avocado evenly among lettuce leaves.
  • Step #3 Drizzle each with about 1 1/2 tsps sambal; roll up.
