Chicken Skewers With Mint Sauce Recipe

Ingredients
  • 1 tbsp extravirgin olive oil
  • 2 (1 1/2-oz) slices white bread
  • 1/4 tsp crushed red pepper
  • 3/4 c packed fresh mint leaves (about 3/4 oz)
  • 1/2 tsp salt
  • 1 lb skinless, boneless chicken breast, cut into 1-inch pieces
  • 1 tsp olive oil
  • 1/4 tsp crushed black peppercorns
  •  Cooking spray
  • 1/2 tsp salt
  •  Mint sauce:
  • 2 garlic cloves, minced
  • 2 tsps white wine vinegar
  • 2 garlic cloves, minced
  •  Chicken:
  • 1/2 c water
  • 2 tbsps fresh lemon juice

Directions
  • Step #1 To prepare chicken, mix first 6 ingredients In a large-ish zip-top plastic bag.
  • Step #2 Add chicken; seal & marinate in refrigerator 15 mins, turning bag every once in awhile.
  • Step #3 Remove chicken from bag; discard marinade.
  • Step #4 Prepare grill.
  • Step #5 Thread chicken pieces onto 6 (8-inch) skewers.
  • Step #6 Place skewers on grill rack coated with cooking spray; grill 8 mins or until chicken is done, turning frequently.
  • Step #7 To prepare mint sauce, place bread slices in a food processor/blender, & pulse until coarsely crumbled.
  • Step #8 Add mint, olive oil, 1/2 tsp salt, white wine vinegar, & 2 garlic cloves; pulse until mixd.
  • Step #9 With processor on, slowly pour water through food chute, & process until smooth & well mixed.
