Pork And Kimchi Dumplings Recipe

Ingredients
  •  Cooking spray
  •  Sauce:
  • 2 tsps low-sodium soy sauce
  • 1/2 tsp dark sesame oil
  • 3 tbsps low-sodium soy sauce
  • 1 tbsp minced green onions
  • 1/2 c finely sliced Shang Kimchi
  • 1 1/2 tbsps mirin (sweet rice wine)
  • 1/2 c finely sliced shiitake mushroom caps
  • 2 tsps mirin (sweet rice wine)
  • 4 oz ground pork
  • 1 1/2 tbsps rice vinegar
  • 1/2 tsp dry mustard
  • 1 tsp cornstarch
  • 1/4 c finely sliced green onions
  • 1 tsp minced peeled fresh ginger
  •  Dumplings:
  • 1 tsp cornstarch
  • 1 tsp sesame seeds, toasted
  • 24 gyoza skins
  • 1/2 tsp dark sesame oil

Directions
  • Step #1 To prepare dumplings, mix first 10 ingredients.
  • Step #2 Working with 1 gyoza skin at a time (cover remaining skins to prevent drying), spoon about 1 1/2 tsps pork mixture into center of each skin.
  • Step #3 Moisten edges of skin with water.
  • Step #4 Fold in half, pinching edges together to seal.
  • Step #5 Place dumplings, seam sides up, on a baking sheet sprinkled with 1 tsp cornstarch (cover loosely with a towel to prevent drying).
  • Step #6 Arrange half of the dumplings in a single layer in a bamboo or vegetable steamer coated with cooking spray.
  • Step #7 Steam dumplings, covered, for 10 mins.
  • Step #8 Remove dumplings from steamer; keep warm.
  • Step #9 Repeat procedure with remaining dumplings.
  • Step #10 To prepare sauce, mix 1 tbsp onions & remaining ingredients.
  • Step #11 Serve sauce with dumplings.
