Melon Salad With Prosciutto And Goat Cheese Recipe

Ingredients
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp honey
  • 2 oz goat cheese
  • 1/4 tsp salt (preferably sea salt)
  • 1 tsp Dijon mustard
  • 1 oz prosciutto, thinly sliced & cut into thin strips
  • 1/2 thinly sliced red onion
  • 8 c melon balls (combination of watermelon, honeydew, & cantaloupe)
  • 4 c arugula leaves, cleaned & dried
  • 2 tbsps minced shallots
  • 1 tbsp pine nuts, toasted
  • 3 tbsps balsamic vinegar
  • 1/4 c thinly sliced fresh basil
  • 1 tbsp extra-virgin olive oil

Directions
  • Step #1 Heat prosciutto strips in a non-stick pan over med-heat/flame; cook 3-5 mins, until crisp.
  • Step #2 Drain on paper towels.
  • Step #3 Whisk together the oil, shallots, vinegar, honey, & mustard.
  • Step #4 Gently toss melon balls, onion, pine nuts, & basil with the dressing.
  • Step #5 Mound the arugula onto 6 plates & top this with melon mixture.
  • Step #6 Crumble the goat cheese & scatter the prosciutto on top.
  • Step #7 Finish with pepper & salt.
