Smoked Salmon Crostini Recipe

Ingredients
  • 1/2 c light garlic-and-herbs spreadable cheese (such as Alouette Light)
  • 1 1/2 tbsps fresh lemon juice
  • 1/4 c sliced green onions
  • 1/2 c sliced fennel bulb
  • 1 tsp freshly ground black pepper
  • 3/4 lb cold-smoked salmon, cut into thin strips
  • 48 (1/2-inch-thick) slices French bread baguette, toasted (about 1 1/2 lbs)
  • 2 tsps sliced fresh dill
  •  Fresh dill sprigs (optional)
  • 1 tsp grated lemon rind
  • 1 tbsp extravirgin olive oil

Directions
  • Step #1 Combine the first 8 ingredients; cover & chill at least 1 hr.
  • Step #2 Spread each toast slice with 1/2 tsp cheese; top each with 1 tbsp salmon mixture.
  • Step #3 Garnish with fresh dill sprigs, if desired.
