Oyster Beignets Recipe

Ingredients
  • 1/2 c milk
  • 1 c all-purpose flour
  •  Caper Dipping Sauce
  • 1/2 (12-oz) container fresh oysters
  •  Vegetable oil
  • 1 tsp grated lemon rind
  • 6 tbsps butter, cut into pieces
  • 4 large eggs
  • 1 tbsp sliced fresh chives

Directions
  • Step #1 Drain oysters, reserving 1/2 c oyster liquor.
  • Step #2 Coarsely chop oysters; set aside.
  • Step #3 Combine flour & lemon rind in a small bowl.
  • Step #4 Combine reserved oyster liquor, & butter In a large-ish saucepan over med-heat/flame, milk, stirring until butter melts.
  • Step #5 Add flour mixture all at once, beating vigorously with a wooden spoon 1 min or until mixture leaves sides of pan.
  • Step #6 Remove from heat.
  • Step #7 Add eggs, 1 at a time, beating vigorously with a wooden spoon after each addition until smooth.
  • Step #8 Fold in oysters & chives.
  • Step #9 Pour oil to depth of 2 inches into a Dutch oven; heat to 375°.
  • Step #10 Drop oyster mixture by heaping tbspfuls into oil.
  • Step #11 Fry, in batches, 2 to 3 mins or until golden.
  • Step #12 Drain on wire racks.
  • Step #13 Serve as soon as possible with Caper Dipping Sauce.
