Bacon-wrapped Scallops Recipe

Ingredients
  • 2 garlic cloves, minced
  • 1/4 tsp salt
  • 2 tbsps sliced fresh cilantro
  • 3 tbsps fresh lime juice
  • 24 bacon slices (about 1 lb.), cut in half
  • 1/2 c olive oil
  •  Wooden picks
  •  Dash hot sauce
  •  Vegetable cooking spray
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 lbs sea scallops, rinsed & drained (about 48)

Directions
  • Step #1 Combine first 6 ingredients in a small mixing bowl; whisk in olive oil in a slow, steady stream.
  • Step #2 Place scallops in a zip-top plastic freezer bag; add lime juice mixture.
  • Step #3 Cover up or seal, & chill 30 mins, turning once.
  • Step #4 Drain scallops, discarding marinade.
  • Step #5 Microwave bacon, covered with paper towels, in 4 batches, at HIGH 3 to 4 mins or until slightly brown.
  • Step #6 Wrap 1 bacon piece around each scallop, & secure with a wooden pick.
  • Step #7 Sprinkle top evenly with salt & pepper.
  • Step #8 Coat a cold cooking grate with cooking spray, & place grate on grill over medium-high heat (350° to 400°).
  • Step #9 Place scallops on grate, & grill, covered with grill lid, 3 to 4 mins on each side or until bacon is crisp & scallops are done.
